Rich Macaroni Cheese
Ingredients:
- 500 g Macaroni
- 500 ml Cream
- 500 ml Water
- 500 g Full Flavour Cheddar Cheese (This may be light or dark)
- 8 rashes of Bacon
- 1 Large Onion
- 1 tub of close cup mushrooms or 1 Can of sliced mushrooms in brine.
- 1 Chicken Stock
Method:
- Add Macaroni to boiling hot water with 1/2 teaspoon of salt. Cook for 15
to 20 minutes.
- Grate the cheese.
- Slice onion and mushrooms and add to a dollop of butter and about a
tablespoon of oil. Fry this until it is a nice brown colour.
- Slice bacon into squares and add to the mixture. Fry until the bacon is
fully cooked.
- Pour dissolved chicken stock into the mixture. This should only be made
up of about 100ml of boiling water and the chicken stock.
- Let this simmer for a few minutes, then add 500 ml of double cream, 500
ml of water.
- Put about half of the grated cheese into the mixture. Stir in till, the
cheese has melted.
- Then to thicken, use a teaspoon of corn flour in a very small amount of
water (make a easy to mix consistency). Add this to the cream mixture
stirring continuously.
- By the time you have finished the cheese sauce, the macaroni should have
finished cooking.
- Drain the macaroni thoroughly. Add the macaroni to the the cheese sauce
mixture, stir in well.
- Put into a large baking dish and cover the top with a liberal amount of
cheese and bake in the oven till the cheese has browned.
- Serve with a light garnish of tomato and lettuce.
This will feed a big family of 8 without any problems at all. It is a very
filling meal and tasty too.
