Spinach and Poached Eggs
Ingredients:
- Spinach
- Eggs
- Cream
- Butter
- Salt and Pepper
Method:
- Wash spinach thoroughly, put into dry saucepan with salt, cover closely
and cook 15 minutes. Press through wire sieve. Melt butter and cream in pan,
stir in spinach till thoroughly hot. Place spinach on very hot dish, top
with poached eggs, sprinkle grated cheese over and garnish with fried bread
or toast.
