Stuffed Eggs

Ingredients

  • 6 Eggs
  • ham, chicken, sardines or salmon
  • Salt
  • Pepper
  • Mayonnaise

Method

  • Boil the eggs till hard boiled.
  • Put into cold water for a few minutes. Shell and cut eggs crosswise, slicing off a piece from each end so that the eggs will stand firmly.
  • Remove the yolks and mix with your choice of meat/fish, season with salt and pepper and mix with a little mayonnaise.
  • Fill egg whites and arrange on a bed of lettuce, dust with cayenne and sprinkle parsley.

This makes for a refreshing side item for a barbecue / braai.
